I build a cylindrical model which has R=5cm and Z=10cm.
I want to bombard this model with a 250MeV proton beam and place an observation plane every 1mm in the Z direction.
And I wang to observe the current through this plane,but I don’t know what I should do.
Could you give me some advice?

I would recommend you to start studying the material already available. Particularly, the Scoring II lecture from the last FLUKA beginners’ course. There you will find estimators relevant to your goal.
